German Braised Cabbage
The tanginess of German-style braised cabbage comes from the addition of apple cider vinegar. This pale gold vinegar is made from fermented apples and has a complex, slightly sweet flavor that enhances the ingredients of this popular side dish.

1 tablespoon olive oil
5 cups red cabbage, shredded
1 pear, peeled, cored, and chopped
¼ large sweet onion, chopped
3 tablespoons apple cider vinegar
1 tablespoon sugar
½ teaspoon caraway seed
½ teaspoon dry mustard
Instructions
- In a large skillet over medium-high heat, heat the olive oil.
- Add the cabbage, pear, and onion, and sauté until tender, about 10 minutes.
- In a small bowl, stir together the vinegar, sugar, caraway seed, and mustard.
- Pour the vinegar mixture into the cabbage and stir to combine. Cover and simmer the cabbage for 5 minutes.
- Serve hot.
Cooking Tip
Green cabbage is often the more prevalent variety in supermarkets, so don’t despair if you can’t find a red one. Green will work fine in this recipe— you just won’t get that glorious deep maroon color that looks so inviting on the dinner table.
To make this recipe vegan, simply swap sugar for organic sugar instead.
