Blueberry Coconut Overnight Oats
Rarely have time for breakfast, or looking for an easy grab-and-go option? These overnight oats are the perfect (and delicious!) solution to your busy mornings.

Ingredients
⅓ cup rolled oats
⅔ cup light coconut milk, canned
⅓ cup Greek yogurt, plain, nonfat
1 teaspoon vanilla extract
⅕ teaspoon honey
½ teaspoon cinnamon, grounded
16 blueberries
Instructions
- In a small bowl, mix together the oats, coconut milk, Greek yogurt, vanilla extract, honey and cinnamon. For a thicker consistency, add less coconut milk.
- Cover and store in the fridge overnight or for at least 2 hours.
- Remove from fridge, garnish with blueberries, and enjoy cold.
Cooking Tip
This is an easy and healthy breakfast option to meal prep for the week. Simply double or triple the recipe for desired amount of servings. Oats stored in an airtight container will last up to five days in the refrigerator.
