Festive Cranberry Stuffing
This colorful stuffing is festive and bright. It uses the sweetness from the apple juice to cancel out the tartness from the cranberries, making it a perfect blend during the holidays and still sticks to a kidney-friendly eating plan.

3 cups soft, stale bread, cubed (about 3 to 4 slices)
¼ teaspoon poultry seasoning
1 cup tart apples, diced and peeled
¼ cup apple juice
½ cup raw cranberries, diced
2 tablespoons unsalted butter, melted
¼ cup celery, chopped

Instructions
- Preheat oven to 350°F.
- Combine all ingredients in a large bowl and toss to mix.
- Place in a lightly greased casserole dish. Bake for 30 minutes.
Cooking Tip
If you would like to prep this recipe ahead of time, store the chopped bread separately from other ingredients to prevent soggy bread.
