Pesto Pita Pizza

This pesto pita pizza is a mouthwatering meal that packs in the flavor. The balsamic glaze adds a sweet and tangy finishing touch. Make this pizza for an easy weekend lunch or serve in bite-size pieces as an appetizer.

Ingredients
Homemade pesto:
1 cup basil leaves
1 tablespoon garlic, minced
3 tablespoons pine nuts
⅓ cup Parmesan cheese, grated
1 teaspoon pepper
⅓ cup olive oil
Pizza:
2 pieces round white pita bread
1 cup mushrooms, sliced
2 plum tomatoes, chopped
¼ red onion, chopped
2 tablespoons store-bought balsamic glaze, premade
Instructions
- Prepare homemade pesto by combining basil, garlic, pine nuts, Parmesan and pepper in a food processor, slowly adding in the ⅓ cup of olive oil. Set aside.
- Preheat oven to 350°F.
- Spread 2 tablespoons of pesto on each pita bread.
- Layer mushrooms, tomatoes and red onion on pita bread.
- Bake for 15-20 minutes until vegetables are slightly crisped.
- Take out and allow to cool.
- Drizzle with 1 tablespoon of balsamic glaze on each pizza.
Cooking Tip
Store leftover pesto in an airtight container for up to 1 week. Use leftover pesto in a chicken or pasta dish later in the week.
Balsamic glaze can be purchased pre-made near most salad dressings in the grocery store.
If you purchase store made pesto in the jar to make the recipe quicker, make sure to look for a low-sodium option.
