Crisp and Creamy Shrimp Salad with Creamy Lime Dressing

Bring this dish to a summer picnic, and you’ll be sure to be the center of attention. Very easy to make with only a few ingredients, this will satisfy those seafood lovers around you.

Ingredients

Ingredients for Creamy Lime Dressing

4 ounces cream cheese, cubed and softened

⅓ cup canola oil

1 teaspoon garlic powder

1 teaspoon sugar

1 teaspoon fresh lime zest (medium lime)

3 tablespoons fresh lime juice

 

Ingredients for Creamy Shrimp

1 tablespoon unsalted butter

1-pound frozen shrimp, peeled, deveined, tails removed and thawed (if using frozen)

1 cup cucumber, peeled and chopped

3 cups romaine lettuce, shredded

Instructions

  1. Place all ingredients for the dressing into a food processor and process until smooth, about 1 minute.
  2. Place the mixture into a medium bowl and push it up the sides to form a bowl shape. Set aside.
  3. For the shrimp:
    1. If using precooked shrimp, heat a pan over medium heat, add the butter. When melted, add the shrimp, stir, and cover. Let warm for 2 to 3 minutes then remove from heat.
    2. If using raw shrimp, heat pan over medium-high heat, add butter. When melted, add the shrimp. Cook 3 to 4 minutes or until shrimp is pink and “C” shaped. Tossing frequently. Remove from heat (Hint: “C” shape means cooked; “O” shape of the shrimp means overcooked).
  4. Move the shrimp to the sauce “bowl”. Add the cucumbers and mix everything together well.
  5. Place ½ cup of lettuce in a bowl and form an indent in the center.
  6. Place ½ cup of the shrimp salad into the indent.
  7. Serve warm or cold

Cooking Tip

Top shrimp salad with fresh cilantro for added flavor.
