Dijon Vinaigrette

This can become your go to dressing. It can be used for a salad, a chicken marinade or even to stir into leftover rice.

Ingredients

1 small shallot

3 tablespoons lemon juice

1 tablespoon red wine vinegar

1 tablespoon Dijon mustard

½ cup extra-virgin olive oil

Freshly ground black pepper, to taste (optional, not included in nutritional analysis)

Instructions

  1. Using the small hole on a box grater, grate the shallot into a small bowl.
  2. Whisk in the lemon juice, red wine vinegar and mustard.
  3. Gradually whisk in the olive oil and season with pepper, if using.
  4. Store refrigerated in a glass jar.

Cooking Tip

If keeping in refrigerator, shake dressing container before each use to fix natural separation.
