2 egg whites, room temperature

¼ teaspoon cream of tartar

A pinch of salt

1-1½ teaspoon champagne extract, or extract of choice (used 1.5 tsp vanilla extract for the nutrient analysis)

½ cup sugar

Instructions

  1. Preheat oven to 225°F. Line baking sheet with parchment.
  2. In a bowl, beat egg whites until frothy. Add cream of tartar, salt, and extract and beat until soft peaks form. Continue mixing and add sugar, a tablespoon at a time, until dissolved and stiff peaks form.
  3. Pipe onto baking sheet.
  4. Bake for 45 minutes, then turn oven off. Let stand in oven for 1 hour. DO NOT open the oven door.
  5. Cool leftovers at room temperature and stored in an airtight container.
