Beef and Cabbage Vegetable Soup
This is the kind of beef stew that just melts in your mouth. So tender and so warm and delicious, whip this up in your favorite crock pot if you’re short on time!

Ingredients
1½ pounds beef chuck, chopped
10 cups water
1 clove of garlic, chopped
½ pound cabbage, cut into bite-size pieces
½ cup onion, chopped
½ cup fresh cilantro, chopped
2 carrots, cut into bite-size pieces
½ cup low-salt tomato sauce
1 potato, cut into bite-size pieces
3 stalks celery, cut into bite-size pieces
Instructions
- Place meat, water and garlic in a large pot and simmer for 1 hour.
- Add remaining ingredients and simmer until vegetables are tender.
