This recipe is a blend of nutritious veggies, served on a warm English muffin and sprinkled with Parmesan cheese.

Serving size

½ muffin + ¾ cup vegetables

Ingredients

1 tablespoon olive oil 

¼ cup onion, chopped 

1 cup red cabbage, chopped 

½ cup broccoli, chopped 

3 tablespoons water 

¼ teaspoon tarragon 

¼ teaspoon garlic powder 

¼ teaspoon onion powder 

¼ ground black pepper 

¼ ground red pepper 

1 English muffin, split and toasted 

2 tablespoons Parmesan cheese, grated

Instructions

  1. Add olive oil to wok (or large skillet) on medium heat. 
  2. Add onion, cabbage, and broccoli. Stir-fry for 2-3 minutes. 
  3. Add water and cover. Steam for 5 minutes. 
  4. Add all spices and cook 2 minutes more. 
  5. Serve over English muffin halves and sprinkle with Parmesan cheese. 

Cooking Tip

Use whole wheat English muffins for a healthier option.
